I am one of those people who loves zucchini and so adding them to muffins just sounds delicious! I must make some of these soon!

I love adding zucchini to baked goods since hardly anyone every notices and it adds a lot of moisture. I'd just call these delicious apple muffins, Terri. 🙂 I'm so glad you've joined us!

Terri,
These muffins look yummy! I often finely shred and freeze my zucchini when it's coming at me from all directions (the garden & the farm share). Once thawed, it's super easy to drain really well because the simple act of freezing breaks down those plant cell walls and releases the pesky water. Point of my rambling science lesson is--I can make your muffins all Fall and into winter with my frozen zucchini!
