Hi, I’m planning on making this recipe this week! I’m just wondering wether I’m supposed to use the thick canned coconut milk or the thinner stuff from the carton? If someone could help me out I’d be really grateful, thank you!

This is one of the most gorgeous cakes I’ve ever seen. Absolutely stunning! Pineapple would be delicious but I think I’d like the pina colada version too!

It might be because my favorite color is blue. Or, it could be because I love a good cake. Especially one from scratch. Also, besides loving pineapple and being very familiar with its symbolic meaning (having done my anesthesia training in Charleston, SC where it is the state’s official symbol), there are many reasons why I am in love with this cake recipe. Ultimately though, I think it may be because this is one of the best, if not the very best recipe to come out of Brunch Week. Thanks so much for all of your hard work in putting this event together but especially for sharing this show-stopper of a dessert with us. It is out of this world!
