In a medium bowl with a hand blender, or the bowl of your stand mixer, combine cream cheese and 1/2 cup sugar on medium until smooth and combined. Add eggs one at a time and beat until combined. Mix in vanilla. Pour cheesecake over crust and prepare apples and streusel.
Combine diced apples, 2 tablespoons sugar and apple pie spice. Spoon evenly over cheesecake mixture.
In medium bowl, combine ingredients for streusel topping and cut in butter until mixture is crumbly. Sprinkle topping over apple layer and bake for 30 minutes, or until filling is set. Cool completely before cutting.
