Pumpkin Spice Latte Chia Pudding

  • 1/4 cup chia seeds
  • 1/2 teaspoon pumpkin pie spice
  • 2 tablespoons light brown sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup canned pumpkin, not pumpkin pie filling
  • 1/4 cup Door County Pumpkin Spice Coffee, chilled
  • 3/4 cup milk
  • Garnish with whipped cream, pumpkin pie spice and pecans


  • Combine all chia pudding ingredients in a medium jar with lid, shake, and refrigerate overnight. Serve with optional whipped cream, pumpkin pie spice, or candied pecans
