Toasted Coconut Crunch Ice Cream

Toasted coconut and chocolate covered cacao nibs are the perfect accompaniment for a rich and creamy coconut-flavored ice cream!

Mr. L&C love coconut, so this ice cream is right up his alley. I created a delicious and creamy coconut ice cream and swirled in chocolate covered cacao nibs. Cacao nibs aren’t that sweet, but since they are covered in chocolate, it’s just enough, plus they give a bit of a crunch.

Toasted coconut is a great topping for ice cream and I love the color it gives. Isn’t this coconut bowl adorable too? What better way to serve coconut ice cream than in a coconut bowl. I bought mine from the party store, but you can find them online too.

The base of this ice cream is one that I love to add different flavors and mix-ins, so it can be totally customized to your liking. I love all things dairy, so I had a hard time trying to figure out what to make. Ice cream is one of my favorite milk recipes and this one is creamy, crunchy, and oh-so-delicious!

This time next week I will be at the Food Wine Conference here in Orlando, Florida. It’s one of my favorite blog events of the year. Toasted Coconut Crunch Ice Cream

Toasted coconut and chocolate covered cacao nibs are the perfect accompaniment for a rich and creamy coconut-flavored ice cream!

Ingredients

  • 1 cup whole milk
  • 1 cup extra fine granulated sugar
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla bean paste
  • 1 teaspoon coconut extract
  • 2 cups heavy whipping cream
  • 1/4 cup chocolate covered cacao nibs
  • 1/2 cup toasted coconut

Instructions

  1. Make sure the bowl of your ice cream make is frozen for a minimum of 24 hours before use.
  2. In a medium saucepan, heat milk, sugar and salt just until sugar is melted.
  3. Combine milk, vanilla bean paste, coconut extract and whipping cream in a large bowl. Chill in the refrigerator for 2 hours.
  4. Churn according to manufacturer’s direction. During the last 2 minutes of churning, add in the cacao nibs. Place in freezer-safe container and freeze a minimum 4 hours, or until firm. Serve and top with toasted coconut

Simple Southern Sweet Tea is a staple at our family and holiday gatherings, and perfect for sipping on the porch while watching the sunset any time of year.

My best friend’s grandmother, who everyone called Gran, even if we weren’t her grandchildren (but in all reality she is seriously like my own grandmother and I love her just the same) was one of the people who started me on my love of sweet tea. She also makes THE best chicken wings in the entire world, but that is for another time.

The other person responsible for my love of sweet tea is my uncle’s mother-in-law, Nanny. Every family gathering we went to with my aunt’s family, sweet tea was present. Nanny is the sweetest lady and I always love being a part of their family parties, especially if she comes. She reminds me so much of my own grandmother with her warm smile and welcoming hugs.

Sweet tea isn’t just a tradition, it’s more personal than that; it’s about community. Inviting someone in and offering a glass of cold sweet tea, sitting on the porch with friends in the Summer sipping from a delicious flavored tea, or enjoying a glass at a holiday party or celebration are all perfect occasions for my simple southern sweet tea.

Baby showers are also the perfect time for sweet tea, and today a group of blogging friends are celebrating a new mom and her adorable, just a little early, baby boy. Angie from Big Bear’s Wife was due in early October, but the little man decided he wanted to make an entrance 3 days ago, thus spoiling my surprise virtual baby shower–now turned surprise virtual baby welcome, LOL.

Simple Southern Sweet Tea

Simple Southern Sweet Tea with tips and tricks from a few grandmotherly sources – baking soda helps with bitterness, cooling on counter prevents cloudiness, Luzianne recommended for best tea.

Ingredients

  • 16 cups filtered/spring water, divided
  • 4 Luzianne large iced tea bags, not cold brew
  • 1/4 teaspoon baking soda
  • 1 1/2 – 2 cups extra fine granulated sugar – I use Dixie Crystals
  • Lemon and mint for garnish

Instructions

  1. In medium saucepan, bring 4 cups water just to a boil. Place tea bags and baking soda in a large glass measuring cup that is heat-safe.
  2. Pour water over tea bags and let steep for 5-8 minutes. Remove tea bags, letting them drip, but do not squeeze bags to get liquid out.
  3. Pour into large pitcher and stir in sugar. Pour remaining 12 cups water into pitcher and let cool to room temperature. Store in refrigerator and serve over ice with lemon slices and mint for garnish.

Yield: 1 gallon

Lemon is definitely one of my go-to Springtime flavors. I love citrus and growing up in Florida, citrus is abundant. My family and I go to the citrus groves during season and pick oranges, tangerines, grapefruit and lemons. I love everything from meyer lemons to key limes, and everything in between.

While I love baking from scratch the most, sometimes I do the semi-homemade route and start with a box mix. When I am planning a big party or holiday event, this is a time-saver, especially when I am in charge of more than one course or dish. I am definitely glad I chose this Easy Lemon Bundt Cake for our Easter celebration. It is sweet and moist, and I love the tart lemon flavor.

Easy Lemon Pudding Bundt Cake

Cake Ingredients:

  • 15.25 ounce Lemon Supreme cake mix, dry mix only
  • 3.4 ounce instant lemon pudding, dry mix only
  • 4 eggs, room temperature
  • 1 cup plain Greek yogurt or sour cream
  • 1/2 cup vegetable oil
  • 1/2 cup butter, softened
  • 1/2 cup warm water
  • 1 teaspoon lemon extract
  • 1-2 tablespoons lemon zest

Frosting:

  • 6 ounces cream cheese, softened
  • 2-3 cups powdered sugar
  • 2 teaspoons lemon zest
  • 1-2 tablespoons lemon juice
  • Yellow sprinkles, optional

Instructions:

  1. Heat oven to 350F. Prepare bundt pan with baking spray or grease and flour. Set aside
  2. In stand mixer or mixing bowl, combine cake mix, pudding, eggs, Greek yogurt, oil, butter, water, extract and first measure of lemon zest. Mix to combine.
  3. Pour into bundt pan and bake 50-60 minutes, until a tester inserted into the center of the cake comes out clean. Cool in pan for 10 minutes, then turn out onto rack to cool completely
  4. Prepare Frosting. With hand mixer or stand mixer combine cream cheese, 3 cups powdered sugar, zest and 1-2 tablespoons juice. Add more powdered sugar or juice as needed. Either spread onto cake or place into piping bag and pipe on top of bundt cake. Add sprinkles. Chill until serving.

Yield: 12+ servings
