An Announcement from Stonyfield Yogurt #StonyfieldBlogger

I have a love affair with Stonyfield Organic and I’m not ashamed to say it. We use Stonyfield quite a bit, whether for morning smoothies, in baked goods, and even sauces and dips. I am excited to celebrate with Stonyfield and share a special announcement that Stonyfield is now a B Corporation!

Valentine’s Day has always been a special holiday since KB and I were little. Our parents always gave us little presents and we had a nice family dinner together. I have always loved Valentine’s day even before I started celebrating it with Mr. L&C. I know it sounds cheesy but I love Love.

This year, Toddler L&C is starting to realize what holidays actually are, so it has been a lot of fun. My Mom surprised her with some arts and crafts for Valentine’s Day – they made a heart paper chain and some necklaces with heart-shaped beads. She had a blast making all her Valentine’s crafts so I knew I wanted to make her some special treats to celebrate.

She was so surprised and loved Mommy’s heart cookies. She kept trying to eat them before I photographed them, so I gave her some of the decorated inside hearts – the ones that you cut out for the middle layer. Don’t waste that dough, just put it on the same cookie sheet and bake it all together. They are the perfect snack for little hands.

These Heart-Shaped Cookie Boxes are the such a cute treat, especially since it can hold surprise sweets. Conversation hearts or chocolate pieces are great fillings. You could even pour sprinkles inside. The royal icing decoration can be customized to any color.

I knew I wanted my hearts to match the candies inside, so I went with pink. I saved some white royal icing for the intricate designs. The lace is my favorite and I can’t wait to make more cookies like that. I hope you have a Happy Valentine’s Day!

Chipotle Ranch Dip Taco Bar is the perfect appetizer or party food. Create your perfect layered dip with all your favorite toppings, and Stonyfield Yogurt’s newest product – Double Cream.

Ingredients

  • Simply Organic Chipotle Ranch Dip Packet
  • 2 cups Stonyfield Organic Double Cream Plain Yogurt
  • sliced black olives
  • shredded lettuce
  • shredded cheese
  • diced tomatoes
  • chips

Instructions

  • Combine Chipotle Ranch Dip and Double Cream Yogurt. Following package directions, refrigerate. Serve with toppings.

It’s strawberry season in Florida and I am loving it. I have been posting quite a few strawberry photos recently on Instagram, and can’t wait to get in the fields to pick. Until then, I decided to create a refreshing drink, perfect for any occasion – Strawberry Lemonade Spritzer.

Most people associate spritzers with being an alcoholic drink, but my mocktail is just as good. Sweet strawberries blended with lemon-lime soda are mixed with pink lemonade concentrate and more lemon-lime soda. Garnish with some fresh mint, strawberries and a cute straw, and you are ready to party!

I love being surprised with little gifts and treats, so I surprised my Sister for National Compliment Day. In addition to enjoying these Strawberry Lemonade Spritzers with her, we also indulged in some Hand-Dipped Champagne Strawberries and Cake Truffles, compliments of Shari’s Berries. She works really hard as a Physician Assistant, and nothing says “I love you” like some chocolate covered strawberries. I know these definitely brightened her day.

Strawberry Lemonade Spritzer

Strawberry Lemonade Spritzer is sweet, tart, and a great non-alcoholic party drink. Make it extra pretty with some fresh mint and cute straws for someone special!

Ingredients

  • 10 ounces strawberries, fresh or thawed from frozen
  • 2-liter lemon-lime soda
  • 1 – 12 ounce can frozen pink lemonade, thawed
  • mint and strawberries for garnish

Instructions

  • In a blender, process strawberries and 1 cup lemon-lime soda until pureed. Combine pureed strawberries, remaining lemon-lime soda, and pink lemonade in pitcher. Distribute between glasses. Garnish with mint and strawberries.

Yield: 8 drinks
Prep Time: 00 hrs. 05 mins.

Total time: 5 mins.

Happy New Year. Paying it forward is the perfect way to a fresh start, and Stonyfield Yogurt helped me pay it forward for the Cocktails and Chemo Foundation!

As a new year begins, people are starting fresh after a holiday season filled with family and fun. A lot of folks also choose to give back during the holiday season. Whether you volunteer, donate food, time or money, every little bit is worth it.

I have loved working with Stonyfield Yogurt this past year and they gave us the opportunity to pay it forward by giving us a $50 gift card to use for a charity of our choice. Some bloggers bought food for food banks, others donated it to pet shelters or childrens’ homes. Every little bit helps!

I chose the Cocktails and Chemo Foundation to pay it forward. Cocktails and Chemo is run by a remarkable woman, Amanda Clark. She and her husband, Joe, started the Cocktails and Chemo Blog to document his journey of Colon Cancer diagnosis, chemotherapy, death, and now documenting life as a widow and raising their adorable daughter, Mira Joey.

The Cocktails and Chemo Foundation’s mission is to create a support network for the often forgotten caregivers of cancer patients by providing one-of-a-kind care packages. It is dedicated to caregivers.

The Foundation sends care packages to caregivers all across the country, they sponsor “Stay Glam” nights at salons welcoming loved ones in for a night of pampering, and their greatest accomplishment is giving grants to caregivers who are forced to leave their jobs to care for a sick loved one.

A caregiver can be a spouse, parent, brother or sister who is caring or has cared for someone who is struggling with a long term illness. Their goal isn’t to cure cancer, but instead to give hope and a little boost to the people who need it the most.

Amanda is such a warrior and I admire her so much. Cocktails and Chemo is close to my heart. I have lost family and friends to cancer, but also because Mira is the same age as ToddlerLnC – they were born days apart. Our whole Orlando community rallied behind them and are still #JoeStrong. I can’t imagine what their family has gone through, and am so amazed at the good that has come out of it. They are helping and inspiring families every day .

I love the flavors of apple pie, but don’t always like making or eating the crust. I am kind of a crust snob. Sometimes crusts just don’t taste good. I often like to reinvent traditional pie recipes and put a twist on the classics. These Apple Pie Twists are a perfect example.

The apples are cooked to perfection, then spread on puff pastry, twisted, and baked to perfection. They are flaky, tart, sweet, and absolutely perfect when I am in the mood for apple pie without the crust.

I make Buffalo Ranch Chicken Dip for almost every party or gathering throughout the year, and especially during the holiday season. It’s made with just 5 ingredients, and very easy to put together. This dip can be served cold or room temperature, but I like to bake mine in the oven for a warm dip that everyone loves.

I often serve my Buffalo Ranch Chicken Dip with crackers or chips, but I prefer mine with veggies. I love the crisp, cool crunch of celery, carrots and snap-peas with this spicy dip. The ranch and cheese definitely tone down the spice, but we all know that buffalo sauce packs a punch. While I love it on wings, sandwiches and in dips, I wasn’t able to eat it as much as I liked, because of heartburn.

Buffalo Ranch Chicken Dip

Buffalo Ranch Chicken Dip

Buffalo Ranch Chicken Dip is a favorite among family and friends for all my holiday gatherings. Perfect for a last minute appetizer, this is ultimate party food is great for a crowd!

Ingredients

  • 1 pound cooked chicken breast
  • 3/4 cup buffalo sauce
  • 1 cup ranch dressing
  • 8 ounces cream cheese, room temperature
  • 12 ounces Monterey Jack/Cheddar, plus more for garnish
  • Carrots, celery and snap peas
  • Chips or crackers

Instructions

  1. Heat oven to 350F.
  2. In the bowl of your stand mixer with the paddle attachment, place chicken breast pieces and shred chicken at lowest spead.
  3. Add in remaining dip ingredients. Stir and place into oven-safe 9×9 baking dish. Bake for 15-20 minutes, or until cheese is melted and dip is warm.
  4. Stir, top with more cheese (optional) and serve immediately with carrots, celery, snap peas, chips or crackers.

Yield: 12 servings
Prep Time: 00 hrs. 05 mins.

Cook time: 00 hrs. 20 mins.
Total time: 25 mins.
