Toasted coconut and chocolate covered cacao nibs are the perfect accompaniment for a rich and creamy coconut-flavored ice cream!

Mr. L&C love coconut, so this ice cream is right up his alley. I created a delicious and creamy coconut ice cream and swirled in chocolate covered cacao nibs. Cacao nibs aren’t that sweet, but since they are covered in chocolate, it’s just enough, plus they give a bit of a crunch.

Toasted coconut is a great topping for ice cream and I love the color it gives. Isn’t this coconut bowl adorable too? What better way to serve coconut ice cream than in a coconut bowl. I bought mine from the party store, but you can find them online too.

The base of this ice cream is one that I love to add different flavors and mix-ins, so it can be totally customized to your liking. I love all things dairy, so I had a hard time trying to figure out what to make. Ice cream is one of my favorite milk recipes and this one is creamy, crunchy, and oh-so-delicious!

Toasted Coconut Crunch Ice Cream

Toasted coconut and chocolate covered cacao nibs are the perfect accompaniment for a rich and creamy coconut-flavored ice cream!

Ingredients

  • 1 cup whole milk
  • 1 cup extra fine granulated sugar
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla bean paste
  • 1 teaspoon coconut extract
  • 2 cups heavy whipping cream
  • 1/4 cup chocolate covered cacao nibs
  • 1/2 cup toasted coconut

Instructions

  1. Make sure the bowl of your ice cream make is frozen for a minimum of 24 hours before use.
  2. In a medium saucepan, heat milk, sugar and salt just until sugar is melted.
  3. Combine milk, vanilla bean paste, coconut extract and whipping cream in a large bowl. Chill in the refrigerator for 2 hours.
  4. Churn according to manufacturer’s direction. During the last 2 minutes of churning, add in the cacao nibs. Place in freezer-safe container and freeze a minimum 4 hours, or until firm. Serve and top with toasted coconut

Monster milkshakes, crazy shakes, or whatever you want to call them, are taking the internet by storm, and this one is deliciously crazy. I love Rice Krispies Treats and this milkshake totally tastes like one. Of course, I had to add sprinkles, because let’s be real, everything is better with sprinkles!

Homemade ice cream is THE best ingredient for milkshakes. You can use store bought, but I like to have homemade ice cream at home anyway, so I used it for this recipe. I have wanted to make a monster shake for a while and decided to enter this recipe into a contest for the Food Wine Conference.

Rainbow Rice Krispies Treat Milkshake

Ingredients

  • 2 cups Marshmallow Ice cream (recipe below)
  • 1/2 cup milk
  • 1/4 cup Rice Krispies cereal
  • Marshmallow frosting
  • Sprinkles for garnish
  • Marshmallows for garnish
  • 1/2 cup heavy whipping cream
  • 1 tablespoon powdered sugar
  • Rice Krispies Treats

Instructions

  1. Frost rim of 2 milkshake glasses with frosting and dip in sprinkles.
  2. Blend together ice cream, milk and rice cereal. Pour into glasses. Top with whipped cream, rice krispies treats covered in sprinkles, and cherries.

Marshmallow Ice Cream

Ingredients

  • 1 cup whole milk
  • 8 ounces mini marshmallow
  • 1/4 cup granulated sugar
  • 1/8 teaspoon salt
  • 2 cups heavy whipping cream
  • 1 teaspoon vanilla bean paste

Instructions

  1. Make sure the bowl of your ice cream make is frozen for a minimum of 24 hours before you make the ice cream.
  2. In a large pot, combine the milk, marshmallows, sugar, salt, and 1 cup heavy cream. Cook until marshmallows have dissolved. Pour into container, add remaining heavy whipping cream and chill 1-2 hours, or until well chilled.
  3. Before churning, mix in vanilla bean paste. Churn ice cream according to manufacturer’s directions. Serve immediately, or place in a freezer-safe container and freeze until firm

Sweet heat is the perfect way to describe this delicious ice cream. The cooling, creamy ice cream pairs perfectly with the spicy cinnamon candy, and I love the color of it – pink ice cream makes the cinnamon flavor such a surprise.

While trying to come up with a Halloween idea for Dixie Crystals, I didn’t want to go the normal witch, pumpkin or ghost route. That’s when I had one of my “light bulb” moments and came up with my Red Hot Devil Ice Cream.

I had a vision of devil horns, tails, and pitchforks sticking out of this creamy cinnamon ice cream. The devil horns and tail came out perfect. The pitchforks didn’t work out too well because I needed to pipe larger and sturdier (i.e. thicker) chocolate to hold up in the ice cream. All-in-all, I think they are pretty darn cute.

This recipe is such an easy way to enjoy some delicious ice cream with almost no work involved. I actually had my stand mixer do most of the work, whipping the heavy cream. The rest is a simple mixing of ingredients in one bowl, pouring into a container, and freezing. In a few hours, you have a delicious treat!

No-Churn Pumpkin Spice Ice Cream

No-Churn Pumpkin Spice Ice Cream is easy, delicious and a perfect Fall treat!

Ingredients

  • 2 cups heavy whipping cream
  • 1 (14 ounce) can sweetened condensed milk
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice

Instructions

  • Whip heavy cream to stiff peaks in your stand mixer. In a medium bowl, while the cream is whipping, combine the sweetened condensed milk, pumpkin, vanilla and pumpkin pie spice. Gently fold the whipped cream into the pumpkin mixture. Pour into freezer safe container and freeze a minimum 6 hours

Prep Time: 00 hrs. 05 mins.

Total time: 5 mins.

Frozen yogurt has been a long-time favorite of mine, and it is even better in pop form. We are a huge fan of popsicles here and #ToddlerLnC loved this version. Chocolate hazelnut butter is one of my favorite flavors – I literally eat it with a spoon right out of the jar, in moderation of course. It is one of those flavors that is good on toast, waffles, cookies, ice cream, etc. When I make smoothies or pops, I always try to use yogurt and a fruit. Bananas are such a great addition to these pops and make them extra creamy.

Stonyfield Yogurt, Justin’s Chocolate Hazelnut Butter, and bananas blend together and freeze into delicious frozen yogurt pops that are perfect for a refreshing breakfast, after-school snack, or dessert.

Ingredients

  • 1 1/2 cup Stonyfield Yogurt
  • 1/2 cup Justin’s Chocolate Hazelnut Butter
  • 2 bananas

Instructions

  • Blend all ingredients and divide between ice pop molds. place lid on top and insert popsicle sticks. Freeze overnight. Enjoy!

Good food, family, friends and fireworks always made it a special day. We have apple pie on the Fourth, and of course vanilla ice cream to top it with, so I thought that would be the perfect combination for an easy and delicious milkshake.

Our Fourth of July celebration always consisted of grilling, swimming in the pool, and lot (and lots and lots) of fireworks. We had so many fireworks that a large table was set up to display and organize them all. The fathers in our cul-de-sac went all-out every year. We set up lawn chairs in our driveway to watch the show. My mom even grew an aloe plant just for our Fourth of July celebrations, in case anyone got burned from a sparkler or firework.

One year, we had a rogue firework that, when lit, flew sideways and onto the firework staging table. I have never seen the Dads move so fast in my entire life. They all lunged for the table, knocking off the bad firework, so we didn’t accidentally light everything on fire. I have such fun memories of Fourth of July with my family and our friends, and cannot wait to share the fun with my toddler too.

  • 2 slices apple pie
  • 1/2 cup milk
  • 5 scoops vanilla ice bean ice cream
  • 1/2 teaspoon ground cinnamon
  • toppings: whipped cream and sprinkles
  • optional: graham cracker crumb rim

Instructions

  • Place apple pie, milk and ice cream in a high-powered blender. Blend and serve in chilled glasses. Top with whipped cream and sprinkles.

Yield: 2 servings

Summer is here! We have had some hot weather recently, along with lots of afternoon and evening storms. My family and I like to cool off with a sweet treat – Vanilla Bean Ice Cream Floats!

Ice cream and I had a love-hate relationship for a while. During middle school I became lactose-intolerant. I loved ice cream, and dairy in general, but couldn’t eat it. I knew it would make me sick, but ate it anyway. When I became pregnant with #ToddlerLnC, I craved ice cream and frozen yogurt through all nine months. I gave in to my cravings, didn’t get sick, and was able to actually enjoy ice cream after so many years. After #ToddlerLnC was born, I was worried that I would need to give it up again, but somehow my body changed and I can eat it all again. I can’t begin to tell you how happy I am that I can have a Vanilla Bean Ice Cream Float and not worry about the consequences after.

Root Beer and Cola are the most common float choices out there, but every person in my family likes a different types of soda. Mr. L&C prefers Cream Soda, I like Strawberry, and my Dad likes Orange Soda. We usually have all of our favorites on hand at home, as well as ice cream in the freezer. It’s so easy to make a float for an afternoon snack or fun dessert, especially when we have friends over for barbecue on the weekends. While you’re there, pick up some Blue Bunny Ice Cream at Walmart along with your favorite soda and create a delicious ice cream float for yourself.

She has had bites here and there since she turned one, but hadn’t really had any interest in it. We were able to sample some of the Ice Cream Sandwiches the other day at a store demo.

Vanilla Bean Ice Cream Floats

A Love and Confections original recipe
Vanilla Bean Ice Cream Float Ingredients:
– 2-3 scoops Blue Bunny Vanilla Bean Ice Cream
– 8-12 ounces Soda, depending on your glass size
Vanilla Bean Ice Cream Float Directions: 
1. Make sure your soda is chilled at least a few hours before making the floats. Scoop the Ice Cream into each individual glass. Pour the sodas on top of the ice cream – you might have to wait a few minutes for the bubbles to subside before adding more soda. Add a straw and enjoy!

Ultimate Strawberry Frozen Yogurt
from Yogurt Culture by Cheryl Sternman Rule

Ultimate Strawberry Yogurt Ingredients:
– 1 pound Strawberries, preferably organic
– 1/2 cup plus 2 tablespoons sugar
– 2 tablespoons balsamic vinegar
– 2 & 1/2 cups plain whole-milk Yogurt (not Greek) or 1 & 1/2 cups plain whole-milk Greek Yogurt
– 1 tablespoon Light Corn Syrup
– 1 tablespoon plus 1 teaspoon finely minced fresh Rosemary, plus (optional) additional minced Rosemary for garnish

Ultimate Strawberry Yogurt Directions:
1. PREP THE BERRIES. In a food processor, pulse the Strawberries, sugar and Vinegar in five 1-second bursts. Let stand at room temperature (go ahead and keep it in the food processor), covered, for 1 hour.
2. MEANWHILE, PREP THE YOGURT. If using traditional yogurt, spoon it into a fine-mesh sieve set over a deep bowl. Refrigerate to drain off the whey for 1 hour only. Discard the whey or reserve it for another use. Add the yogurt to the food processor with the strawberries. (If using Greek Yogurt, do not strain, but do not add the yogurt to the berries until after they have stood for 1 hour.)
3. PUREE AND CHILL. Ad the corn syrup to the yogurt mixture. Process until nearly smooth. Transfer to a covered container and refrigerate for at least 4 hours or overnight.
4. FREEZE. Freeze the mixture in an ice cream maker according to the manufacturer’s instructions. After 20 minutes, add the rosemary. (I did not add any rosemary in my recipe.) Continue churning until the mixture has fully thickened and is nearly scoopable. You may eat it now, soft-serve stle, but I recommend transferring it to a metal loaf pan to further chill and develop deeper flavor. Press a sheet of parchment directly on the surface of the frozen yogurt, then cover tightly with aluminum foil. Freeze for several hours.
5. SERVE. Let the yogurt stand at room temperature at least 20 minutes before scooping with a hot, dry, scoop. Garnish sparingly with rosemary.

I am celebrating, not only the end of #VanillaWeek, but also Love and Confections’ birthday. Five years ago yesterday I created Love and Confections on a whim. I wanted to share my love of baking and pastry and what I was working on in culinary school. I fell in love with food photography and the blogging world. I still have so much to learn, but am immensely proud of where I am. I have accomplished a lot in these past five years and I can’t wait to see where the next five years takes me. Now, onto the recipe… I love ice cream, but didn’t want to pull out the ice cream maker this week, so I decided to do a semifreddo – or translated to “partially frozen” dessert. I am probably going to experiment with my own ratios and flavors soon, but for now, I decided to use Bon Appetit’s version. A lot of times bloggers show only their  best work and don’t tell you about the fails in the kitchen, and believe me, there are some pretty big fails.

In all honesty I thought it would be a good recipe – it’s from Bon Appetit for crying out loud – but it wasn’t. The milk seeped to the bottom, carrying a bunch of vanilla seeds with it, and created an icy vanilla layer that I literally cut off so I could get a good picture. Here is the link for Bon Appetit’s Semifreddo. I did not do the Pistachio and Strawberry layers, and instead just made the Vanilla layer as stated in the recipe. Sometimes you can’t win ’em all. The layer that didn’t separate was absolutely delicious, but I wish it had all the vanilla flavor that seeped out into the bottom. That just motivates me more to create a delicious Vanilla Bean Semifreddo that I will hopefully post soon.

Key Lime Pie Milkshake

Key Lime Pie Milkshake is Summer in a glass. Drink up these last few weeks of Summer sun with this tart and sweet ice cream treat!

Welcome to Day 6, the final day of Ice Cream Week 2014! This year the event is hosted by Kim of Cravings of a Lunatic and Susan of The Girl in the Little Red Kitchen. I love all things key lime. I’m a Florida girl and growing up in South Miami, there was an abundance of citrus, including key limes. This is one of my all-time favorite flavors and I love creating new recipes using key limes. I recently did a Key Lime Pie Cheesecake for National Cheesecake Day and man was it good!

This milkshake is all the goodness of my beloved key lime pie, but in a drink. Ice cream makes everything better, so there was only one way to make key lime pie better and that is by turning it into Key Lime Pie Ice Cream. It is the perfect amount of tart and sweet for a milkshake and I love the crunchy bits graham cracker crumbs throughout the shake.



Key Lime Pie Milkshake

Serves 2

Key Lime Pie Milkshake Ingredients:
– 2 scoops Key Lime Pie Ice Cream*
– 2 scoops Vanilla Bean Ice Cream (homemade or store bought)
– Whole Milk (amount depends on desired consistency)
– Whipped Cream (optional garnish)
– Graham Cracker Crumbs (optional garnish)
– Sprinkles (optional garnish

Key Lime Pie Milkshake Directions:
1. Place Key Lime Pie Ice Cream, Vanilla Bean Ice Cream and Whole Milk in a blender and mix until combined. Pour into glasses and garnish with Whipped Cream, Graham Cracker Crumbs and Sprinkles. Enjoy!
* An alternate version, if you do not want to make Key Lime Pie Ice Cream, is to use all Vanilla Ice Cream and add in 1/2-1 cup of Key Lime Curd (homemade or store bought)
