Poutine Pad Thai

Poutine Pad Thai is an Asian twist on the classic French-Canadian dish, with Idaho Potato Noodles, Vegetables, Chicken, and Cheese Curds. Peanuts, Cilantro and Lime Wedges complete the dish for a colorful and unique presentation!

I put an Asian twist on the classic, by substituting Idaho Potatoes for regular noodles in one of my favorite dishes – Pad Thai! Poutine, a French-Canadian classic, is traditionally French fries, brown gravy, and cheese curds. I am entering this dish into the Idaho Potato Commission Recipe Contest for National Sunday Supper Month. We were tasked with creating an original dish, inspired by the classic. There are so many different and delicious recipe interpretations from fellow food blogging friends.

Spiraled vegetables are so popular now, that I knew potatoes would be perfect for my dish. I used the medium/large spiral setting, because I didn’t want the noodles to be too thin. Zucchini noodles are shortened to “zoodles”, so does that mean that my potato noodles can be called “poodles”? Nah, we’ll just stick to calling them potato noodles, because we really don’t want people to think I am sauteing a furry dog in an Asian sauce…

One of my shortcuts is to use jarred Pad Thai sauce, because I can never really get the same flavor when I make it from scratch. Broccoli Slaw and Bean Sprouts are a must in my Pad Thai, as well as scrambled eggs. I cooked extra chicken earlier in the week and shredded it for this recipe. Sometimes I use pork or shrimp too. The cheese curds are an unexpected twist, but they actually go really well with the Pad Thai Sauce. I love sprinkling chopped peanuts and cilantro on top and using freshly squeezed lime juice.

Poutine Pad Thai

A Love and Confections original recipe
Serves 6
Poutine Pad Thai Ingredients:
– Vegetable Oil
– 4 large Eggs, whisked with salt and pepper
– 1 cup cooked and shredded Chicken
– 8 ounces Broccoli Slaw
– 8 ounces Bean Sprouts
– 4 Idaho Russet Potatoes
– 1 jar Pad Thai Sauce
– White Cheese Curds
– Peanuts, chopped
– Cilantro, chopped
– Lime Wedges
Poutine Pad Thai Directions:
1. In a large saute pan, heat Oil in the pan, then scramble the Eggs, remove and set aside. Add a bit more Oil, then the Chicken and 2 tablespoons of Pad Thai Sauce and cook until heated through. Remove and set aside.
2. Add a bit more oil into the pan and add in the Broccoli Slaw. cook for 2 minutes then add in 2 tablespoons of Pad Thai Sauce. Cook another 2 minutes before adding in the Bean Sprouts. Add an additional tablespoon of Pad Thai Sauce and cook for 4-6 minutes. Remove and set aside.
3. Peel Potatoes, spiral into medium-sized noodles, cutting the long strands in 2-3 pieces. Heat Oil in the pan, and cook potato noodles for 10 minutes, stirring often. Add in 1 tablespoon Pad Thai Sauce and stir to heat through. 
4. Add all the cooked ingredients back into the pan and toss to combine with potato noodles and make sure everything is hot. Serve immediately. Top with Cheese Curds, chopped Peanuts, Cilantro and Lime Wedges. Enjoy!

Mr. L&C and I don’t get to the movies often, now that we have a toddler. We love having fun movie nights at home after she goes to bed. I love creating a theme around our movies, and Hotel Transylvania 2 was the perfect time to create some fun concession-style treats with a twist.

I love all types of popcorn, especially the sweet-salty combination, and chocolate covered popcorn is always a welcome treat. Mr. L&C and I like different kinds of chocolate and candies, so I customized our bark. I spread M&M’S® Chocolate Candies over all the chocolate, and sprinkled unsweetened coconut flakes on his portion. Mine was a bit more colorful, with sprinkles and candy eyes. It was boo-tiful! (see what I did there?)

Coca-Cola is always part of our movie nights out, so I grabbed a 6-pack from Walmart, while I was gathering the rest of the ingredients for our monster munchies! Monster Bark

A Love and Confections original recipe
Monster Bark Ingredients:
– 1/2 – 1 cup Milk Chocolate Bark, chopped
– 1-2 teaspoons virgin Coconut Oil
– 1/4 -1/2 cup M&M’S® Chocolate Candies
– 1/4 cup Unsweetened Coconut Flakes
– Colored Sprinkles
– Candy Eyes

Monster Bark Directions:
1. In a heatproof measuring cup or bowl, melt the Chocolate Bark for 1 minute. Stir then add in the Coconut Oil and heat in 15 second intervals, stirring in between, until the chocolate is smooth.
2. Place a large piece of wax paper on a cookie sheet with sides (jellyroll pan). Slowly pour the hot chocolate onto the wax paper and with an offset spatula, smooth it into an even layer. Do not go all the way to the sides, leave at least 1 inch.
3. Quickly, because the chocolate will set fast, sprinkle on the M&M’S® Chocolate Candies, Coconut, Sprinkles, and gently place the Candy Eyes on the bark. Leave at room temperature to set, or refrigerate until set.
4. Cut with a sharp knife. Store in the refrigerator for up to 3 days. Enjoy!

Chocolate Covered Popcorn
A Love and Confections original recipe
Chocolate Covered Popcorn Ingredients:
– 1 bag Orville Redenbacher Movie Theater Butter Pop Up Bowl
– 1/2 cup White Chocolate Candy Bark
– 1 teaspoon virgin Coconut Oil
– Purple Gel Food Coloring
– M&M’S® Chocolate Candies, optional

Chocolate Covered Popcorn Directions:
1. Cook Popcorn according to package directions, and distribute between two bowls
2. In a heatproof measuring cup or bowl, melt the White Chocolate Bark for 1 minutes, Stir then add in the Coconut Oil and heat in 15 second intervals, stirring in between, until the chocolate is smooth. Stir in the Gel Food Coloring to your liking.
3. Place chocolate into a piping bag, or zip top bag. Cut a small hole at the point and drizzle chocolate over the popcorn. Top with M&M’S® Chocolate Candies or other toppings. Serve immediately and enjoy!

We can’t wait to go back to the fields for a family outing and pick strawberries again. There are so many delicious recipes I enjoy making – sweet, savory, and cocktails. I decided that my first recipe for Florida Strawberry season had to be a show-stopping cake – the Fraisier.

In culinary school, one of my classes was Contemporary Cakes. There were actually a couple chefs that taught this class and I, unfortunately, was not placed with the one I wanted. While I did create a lot of cakes that I enjoyed, I missed out on some really good instruction and great contemporary cakes from the other chef. The Fraisier was one of the cakes the other chef had the class create, so I was able to go in after, and get a mini lesson and take pictures.

Fast forward a few years to my time at a small French Bakery. Low and behold, once strawberry season hit, I had to create Fraisiers – lots and lots of Fraisiers. After being instructed on how to make them, and lots of practice, I succeeded in creating some delicious cakes. These gorgeous Fraisiers seem in depth and difficult to make, but are really straight-forward, simple steps.

Faisier comes from the French word “fraise”, meaning “strawberry”. It is a delicate sponge cake that is soaked with an alcoholic infused simple syrup. Strawberries are cut and decorating the sides, since it is what we would call a “naked cake” – no frosting on the outside to cover it. The filling is debatable, depending on the pastry chef and bakery. Some say just pastry cream or stabilized whipped cream, others say Diplomat Creme, Bavarian Cream, or Mousseline Creme. More strawberries or compote are included in the filling followed by a second layer of sponge cake. The Fraisier can be topped with marzipan, gelee, or other decorations. Any way you make it, Fraisiers are delicious!

Simply Syrup from Love and Confections
Diplomat Cream adapted from The Daring Kitchen
Strawberry Gelee from Canelle et Vanille
*Pastry Cream should be made a day ahead to chill it properly.
*Gelee requires a few hours to set, so plan accordingly for serving time.
* I used an 8-inch Ring Mold and Acetate Cake Collars to prepare this cake.

Strawberry Fraisier Ingredients:
Genoise:
– 6 large Eggs
– 300 grams granulated Sugar
– 300 grams All-Purpose Flour, sifted
– 125 grams Unsalted Butter


Vanilla Simple Syrup:
– 1/2 cup granulated Sugar
– 1/2 cup Water
– 1-2 tablespoons Vanilla Vodka

Diplomat Cream:
– 350 grams Whole Milk
– 1 teaspoon Vanilla Extract
– 1/4 teaspoon Salt
– 10 grams Corn Starch
– 85 grams Vanilla Sugar or granulated Sugar
– 2 large Eggs
– 3 tablespoons Unsalted Butter
– 6 grams powdered Gelatin
– 1 tablespoon Water
– 350 grams Heavy Whipping Cream

Strawberry Gelee:
– 300 grams Strawberries
– 30 grams granulated Sugar
– 10 grams powdered Gelatin
– 30 grams Water

– Strawberries, some green cut off and halved, and some quartered
– Apple or Apricot Jelly for optional garnish

Strawberry Fraisier Directions:
Genoise:
1. Line two half-sheet pans with parchment paper or silicone baking mats and set aside. heat oven to 375F.
2. Prepare a bain-marie by placing a small pot filled with 1/3-1/2 with water on the stove. Make sure that the bowl of your stand mixer, when placed over the pot, does not touch the water.
3. In the bowl of your stand mixer, combine the Eggs and Sugar. Whisk over the bain-marie until hot and the sugar has dissolved.
4. Place bowl onto mixer and whip until the eggs are thick and leaves a trail. Gently fold in the Flour
5. Melt the Butter. Take about a cup of the whipped eggs and whisk it into the melted butter, then fold that butter mixture back into the whipped eggs.
6. Divide evenly between the two trays and spread with a palette knife. Bake for 15-17 minutes, or until golden brown and springs back when gently pressed. Do not over bake. Once it is cool, remove from the pan and lay each onto a sheet of parchment.

Simple Syrup:
1. Place all ingredients into a small saucepan and heat until the sugar is completely dissolved, stirring occasionally. Store in a container for up to 5 days. Reheat before use in Fraisier.

Diplomat Cream:
1. Pour the Milk, Vanilla and Salt into a medium saucepan and scald. In the bowl of your stand mixer, whisk together the Sugar and Corn Starch.
2. Add in Eggs and whisk until smooth. Slowly pour the milk down the side of the bowl while the mixer is on low. Once it is all mixed in, pour the egg mixture back into the pan over medium heat until it is thick.
3. Pour through a fine mesh sieve into a medium mixing bowl and cool for 10 minutes while stirring occasionally.
4. Whisk Butter into the pastry cream until it is smooth. Cover the cream with plastic wrap, pressing down on the surface so there is no air to form a skin. Refrigerate until cool.
5. Once pastry cream is completely chilled, sprinkle the Gelatin over the Water and let it stand a few minutes to soften.
6. Place about 1 cup of the pastry cream into a large mixing bowl over a bain-marie. Heat until 120F, then add in the gelatin and whisk until smooth. Remove from the bain-marie and whisk in the remaining pastry cream.
7. In the bowl of your stand mixer, whip the heavy cream until it holds medium-stiff peaks. Take 1/4 of the whipped cream and gently stir it into the pastry cream to lighten it a bit before folding in the rest of the whipped cream in two batches.

Strawberry Gelee:
1. In a small saucepan, cook the Strawberries and Sugar until soft, puree in a food processor or blender, and strain through a sieve. Use 150 grams of puree for the gelee recipe.
2. Sprinkle the Gelatin over the Water and let it stand a few minutes to soften.
3. Heat the puree in a small saucepan and whisk in the gelatin until smooth and completely dissolved.

Strawberry Fraisier Assembly:
1. Using your ring mold, press down onto the Genoise and cut 2 circles of the same size in each cake. Clean the mold and place onto your serving plate, tray or cake stand – making sure it is able to fit into your refrigerator to keep cold. Line the mold with an Acetate Cake Collar.
2. Place one of the cake circles, top side down, into the mold and make sure it fits firmly into place. Using a pastry brush, gently moisten the cake with the Vanilla Simple Syrup.
3. Firmly arrange the Strawberry Halves around the side of the mold, with the cut side out. Try not to leave any gaps between the base of the berries.
4. Pipe Diplomat Cream in between the berries and a small layer on the cake. Place quartered strawberries over cream. Pipe another layer of cream, leaving about 3/4-1 cup, covering all the berries inside and out. use a small palette knife to make the cream level.
5. Place the second cake layer on top and moisten with the simple syrup. Spread the remaining cream on top in an even layer. Pour the slightly cooled Strawberry Gelee on top in an even layer. Refrigerate for 4 hours.
6. Before serving, lift the ring mold and remove the acetate by gently peeling it away from the cake.
7. Optional garnish: heat 1 cup of Jelly with 1-2 tablespoons of water in a small saucepan. Dip Strawberries in, shake excess off gently, and place on top of cake. Serve immediately. Only garnish right before serving otherwise the jelly will not hold in the refrigerator. Store cake in the refrigerator for up to 2-3 days. Enjoy.

Desserts are always my favorite and these cute football-themed ones were a hit. Coke Zero Cupcakes were topped with a green vanilla frosting and little football decorations. Football-shaped Marshmallow Treats were made from chocolate rice cereal and piped with vanilla frosting to look like the laces on a football. Chocolate Covered Peanut Butter RITZ® Crackers stole the show, because who doesn’t love chocolate and peanut butter, especially when they have fun decorations like green white chocolate and colorful sprinkles.

I love walking through Walmart’s craft and fabric sections for inspiration. I bought some black fabric and ribbon and created a backdrop to mimic a referee uniform. Paper lanterns are always a fun way to add movement to any tablescape. Theme-shaped cutouts and balloons are a great choice to brighten up any background. I knew I wanted to have a trophy, and a DIY craft project was the way to go. The football came from the Sports section, spray paint from Home Improvement, Styrofoam from the craft section, and glitter paper from my supplies at home. RITZ® Crackers Raspberry Brie Bites
A Love and Confections original recipe

RITZ® Crackers Raspberry Brie Bites Ingredients:
– RITZ® Crackers
– 1 tub of Creamy Brie
– Seedless Raspberry Jam

RITZ® Crackers Raspberry Brie Bites Directions:
1. Place RITZ® Crackers on serving tray.
2. If spreading – spread Brie first, then top with Raspberry Jam. If piping, mix the Brie and Jam together, but not completely, then place in pastry bag with star tip and pip onto RITZ® Crackers. Use immediately or refrigerate for up to 1 hour. Enjoy!

Coca-Cola Pulled Pork Ingredients:
– Boneless Pork
– 1-2 teaspoons All-purpose seasoning
– 2 cups Coca-Cola


Coca-Cola Pulled Pork Directions:
1. Season Pork and place into slow cooker. Pour Coca-Cola over, cover and cook on low for 6-8 hours.
2. Remove from slow cooker, and if necessary, remove any fat. Place into the bowl of your stand mixer with the paddle attachment. Shred Pork on the lowest setting. Use immediately, mix with your favorite sauce, or store in refrigerator. Enjoy!

A lot of my blogging friends have been talking about their “word of the year” for 2016. I love the idea of having a word to keep me focused and help guide me through the year. I have thought a lot about it and think my word for 2016 will be “more”. I want to do more and be more – achieve more in my blogging career, be more organized, spend more time having fun with my daughter, be more conscious of my actions and how they affect others, eating more fruits and vegetables, exercising and taking care of myself more.

A lot of my more will take time and practice, but one that I definitely can start right away is eating more fruits and vegetables. My toddler and I love sharing smoothies – we make them a few times a week. I often use the same fruit combinations but want to start branching out and experiment with different fruits and vegetables.

The toddler doesn’t particularly like peanut butter and jelly sandwiches – if she had her way, she would live on chicken nuggets, pasta, cheese, yogurt and fruit. She does eat quite a good amount of fruits and vegetables, but getting her to try new proteins is sometimes a challenge. The way my daughter will learn to eat well is by example, and this Overnight Peanut Butter and Jelly Smoothie is the perfect way to start.

Overnight Peanut Butter and Jelly Smoothie
A Love and Confections original recipe
1 large or 2 small smoothies

Overnight Peanut Butter and Jelly Smoothie Ingredients:
– 1/2 cup Old Fashioned Rolled Oats
– 1 tablespoon Chia Seeds
– 1/2 teaspoon Vanilla Extract
– 1/4 teaspoon Ground Cinnamon
– 3/4 cup Silk Almond Milk (Vanilla flavored optional)
– 3/4 cup fresh Strawberries (frozen if fresh not available)
– 1/2 cup Vanilla Greek Yogurt
– 3 tablespoons Jif™ Peanut Powder

Overnight Peanut Butter and Jelly Smoothie Directions:
1. The night before you want a smoothie, in a medium jar with lid, add the Oats, Chia Seeds, Vanilla Extract, Cinnamon and Almond Milk. Replace lid, shake to mix and refrigerate overnight. Shaking one more time a few minutes later is optional.
2. The next day, layer the Strawberries, Greek Yogurt, Oat mixture and Jif™ Peanut Powder in your blender or immersion blender container. Blend until smooth and serve immediately. Enjoy!
