<h3>Easy Gingerbread Dip</h3>
<p>Yesterday, I featured a <a href="https://www.loveandconfections.com/christmas-sweet-snack-board/" target="_blank" rel="noopener noreferrer">Christmas Sweet Snack Board</a>, and this dip took center stage. Gingerbread is definitely a go-to of mine during the holiday season. <a href="https://www.loveandconfections.com/gingerbread-latte-cupcakes-with-coffee-buttercream/" target="_blank" rel="noopener noreferrer">Gingerbread Latte Cupcakes</a> and <a href="https://www.loveandconfections.com/best-gingerbread-fudge/" target="_blank" rel="noopener noreferrer">Gingerbread Fudge</a> would also be great accompaniments to any seasonal party or gathering. Easy Gingerbread Dip is definitely going to become a family favorite during the holiday season.</p>
<p>This dip is so dreamy, and I will fully admit to eating it with a spoon. Dipping some graham crackers or other cookies are also an option too. The sprinkles on top are one of my favorite sprinkle mixes &#8211; <a href="https://shopsweetsandtreats.com/sprinkles-mix-reindeer-food?acc=1go058uUyL&amp;referring_service=link" target="_blank" rel="noopener noreferrer">“Reindeer Food” from Sweets &amp; Treats Boutique</a>. Sweets &amp; Treats has the cutest sprinkle mixes and I cannot tell you how many sprinkle mixes I actually have &#8211; pounds and pounds! I have sprinkles for every occasion.</p>

<h3>Preparing YOUR INGREDIENTS:</h3>
<p>I often keep frozen whipped topping in the house for easy desserts, like my <a href="https://www.loveandconfections.com/french-vanilla-eclair-cake/" target="_blank" rel="noopener noreferrer">French Vanilla Éclair Cake</a>. The one problem I encounter is I sometimes forget to thaw it, which is necessary for most recipes. I try to set a reminder to place the container into the refrigerator the day before I need it for a recipe.</p>
<p>The cream cheese needs to soften, but not be completely room temperature. I like to measure out my dry ingredients while waiting for the cream cheese to soften. Brown sugar has a great molasses flavor, which is why I use more of it than granulated or powdered sugar in this recipe. Check out my Tips and Tricks on how to increase the spice and molasses in this recipe also.</p>

<li>Thaw the whipped topping.</li>
<li>I love molasses, cinnamon and ginger, so feel free to increase each spice amount by 1/2 teaspoon and molasses by another 1/2-1 tablespoon for a more robust gingerbread flavor.</li>

<h3>Christmas Sweet SNACK BOARD:</h3>
<p>Boards and platters are some of our favorite sharable treats. Some of my recent favorites are the <a href="https://www.loveandconfections.com/southern-brunch-board/" target="_blank" rel="noopener noreferrer">Southern Brunch Board</a> and <a href="https://www.loveandconfections.com/how-to-create-antipasto-platter/" target="_blank" rel="noopener noreferrer">Antipasto Platter</a>. While we aren&#8217;t having any big gatherings this year for the holidays, my family and I are trying to still make it special, and snack boards are a great way to add that touch.</p>
<p>All of the ingredients on this board is readily available at most grocery stores. The only one that is specialty is the Italian rainbow cakes, and those are from Costco. My family loves a variety of cookies and treats, including Italian rainbow cookies, biscotti, molasses cookies, and my personal favorite, a Dutch cookie called stroopwafel. There is a little bit of something for everyone to enjoy.</p>

<h3>HOW TO BUILD A FOOD BOARD:</h3>
<p>This board has both store-bought and homemade elements, which makes it easy to prepare. The homemade Gingerbread Dip is placed in a bowl and topped with one of my favorite sprinkle mixes <a href="https://shopsweetsandtreats.com/sprinkles-mix-reindeer-food?acc=1go058uUyL&amp;referring_service=link" target="_blank" rel="noopener noreferrer">&#8220;Reindeer Food&#8221; from Sweets &amp; Treats Boutique</a>!</p>
<p>We eat with our eyes first, so you have to keep in mind colors, textures, flavors, and movement when building a board or platter. It wouldn’t be as enticing if there wasn’t a variety. With the gingerbread theme, there tends to be a lot of brown, so I broke it up by using red and white bowls, and had a variety of colorful cookies. I also wanted some greenery, and garnished the board with rosemary sprigs from the garden. It gave a nice amount of color, without me worrying if I had non-edible items on the board.</p>

<h3>Spiced Sugared Pecans:</h3>
<p>Every year around this time, the house smells delicious! Between the Spiced Sugared Pecans and our family&#8217;s favorite holiday cookie &#8211; <a href="https://www.loveandconfections.com/ginger-crinkles-for-cookieweek/" target="_blank" rel="noopener noreferrer">Ginger Crinkles</a> &#8211; you can definitely tell it&#8217;s the holiday season. This easy-to-make recipe is a yearly tradition around Christmas. My mom got this recipe a few years ago, and we have been making it ever since.</p>
<p>I usually make more than one batch at a time &#8211; sometimes 2-3 batches total. This recipe is easily doubled or tripled, you just need to ensure you have the oven space to cook the nuts. For 2-3 batches, either split the nuts between 2-half sheet pans with sides, or on a larger  2/3rd or full-size sheet pan with sides. We love these nuts, so a single batch doesn&#8217;t last very long. The whole family snacks on them throughout the holiday season, or however long they last.</p>

<h3>Edible Gifting Options:</h3>
<p>As long as the recipient does not have an allergy, I love giving edible gifts for the holidays. Whether it is <a href="https://www.loveandconfections.com/nutmeg-logs-for-cookieweek/" target="_blank" rel="noopener noreferrer">homemade cookies</a>, spiced pecans, or <a href="https://www.loveandconfections.com/semi-homemade-pumpkin-butter-pumpkinweek/" target="_blank" rel="noopener noreferrer">pumpkin butter</a>, the edible gift options are endless. Mason jars are among my favorite vessel for packaging. They keep the nuts airtight and a festive ribbon tied around the lid looks great.</p>

<h3>Kid-Friendly Snack Board:</h3>
<p>Most of the ingredients for this board are from Trader Joe&#8217;s. They have a wide selection of Fall-inspired treats that my local grocery store doesn&#8217;t have. Trader Joe&#8217;s is about 30 minutes across town, so I usually only go for specialty ingredients that I cannot find anywhere else. Little L&amp;C loved helping me pick out snacks for her board &#8211; because she is a foodie in the making.</p>
<p>Her favorite boards I have created so far were my <a href="https://www.loveandconfections.com/southern-brunch-board/" target="_blank" rel="noopener noreferrer">Southern Brunch Board</a> and <a href="https://www.loveandconfections.com/kid-friendly-snack-board/" target="_blank" rel="noopener noreferrer">Kid-Friendly Snack Board</a>. She loves being able to serve herself, and pick and choose between options. I create my boards with a variety of food that I know she will like. She likes candy and sweets, and is allowed a small amount, but also gravitates toward healthier options too.</p>

<h3>How To Build A Food Board:</h3>
<p>I chose a mixture of store-bought and semi-homemade items for this board. The cute little cauldrons holding the dip and goldfish were purchased from a craft store last year. They were the biggest and tallest items, so those were placed on the board first, along with the bat dish holding the candy corn.</p>
<p>We eat with our eyes first, so you have to keep in mind colors, textures, flavors, and movement when building a snack or <a href="https://www.loveandconfections.com/how-to-create-antipasto-platter/" target="_blank" rel="noopener noreferrer">antipasto platter</a>. It wouldn&#8217;t be as enticing if there wasn&#8217;t a variety. I stuck with orange, brown and white for the color scheme, and pumpkin or spiced flavors for the sweets. I also used a variety of textures, like crunchy and creamy. Snack boards don&#8217;t have to all be sweet or savory. I prefer a mixture, and included carrots and ghost chips with this board too.</p>

<h3>TIPS, TRICKS, AND TOOLS:</h3>
<ul>
<li>Here are a few of my favorite entertaining products, like <a href="https://www.amazon.com/shop/loveandconfections?listId=18PBN76S9UPV1" target="_blank" rel="noopener nofollow noreferrer">including wood boards, bowls and accessories</a>.</li>
<li>I focused on a specific color palette and flavor for this board, and took my inspiration from Halloween.</li>
<li>Start by placing larger items and bowls first, then work your way down to the smaller items.</li>
<li>Make sure everything on your board is edible. My eyeball decorations are store-bought candy that is safe for kids to eat.</li>
<li>Smaller items, like nuts and candy, should be placed last as a filler.</li>

<h3>Platters and Boards:</h3>
<p>Boards are a great way to enjoy many different snacks or appetizers at one time. Most of my boards are built around a theme, like my <a href="https://www.loveandconfections.com/southern-brunch-board/" target="_blank" rel="noopener noreferrer">Southern Brunch Board</a> or <a href="https://www.loveandconfections.com/how-to-create-antipasto-platter/" target="_blank" rel="noopener noreferrer">Antipasto Platter</a>. When planning a platter or board, I always brainstorm beforehand, so I know what to purchase at the grocery store.</p>
<p>For a kid-friendly snack board, I picked items that we regularly have in our refrigerator or pantry. It&#8217;s easy to put a board together like this, because there are no special ingredients, and the whole family can enjoy it. Our whole family made this board an afternoon snack, and I even got to introduce a few kid favorites to them.</p>
<p>Presentation is key, and we often eat with our eyes first. Have food items of different sizes, shapes, colors and flavors. When plating, start with the biggest items first. I chose a large white platter for this board, but you can arrange it on a wooden board, plates, or whatever you have on hand. Make it extra fun by allowing the kids to choose their own items and arranging the food on their personal plates.</p>

<h3>How to create a kid-friendly snack board:</h3>
<p>I am a fan of both sweet and salty, and tend to have both on my snack boards. My daughter loves veggies, so they made an appearance on the board in the form of carrots and cucumber. Feel free to add whatever veggies your kids like, or add some new ones for them to try. If kids see adults or older children eating something, they might try it too. Broccoli, peppers, cauliflower, snap peas, and cherry tomatoes are other good veggie options. I also added hummus and had ranch on the side.</p>
<p>Cubed cheeses and sliced, then quartered salami are good choices for protein. Crackers, naan dippers, and pretzels were also placed on the board. I chose strawberries, raspberries and blueberries. Other fruit like pineapple, oranges and watermelon are great, but are juicy, so you might want to place them in bowls. Apples, unless tossed in a citrus juice, will brown, so I don&#8217;t usually add them to snack boards.</p>
<p>Fruit was added last, because it is usually the smallest and fills in spots. Same with the Goldfish and Pirate&#8217;s Booty. Nuts are a great filler item, but be mindful of food allergies if you are making this board for children other than your own. I left nuts off completely and we didn&#8217;t even miss them.</p>

<li>Here are a few of my favorite entertaining products, like <a href="https://www.amazon.com/shop/loveandconfections?listId=18PBN76S9UPV1" target="_blank" rel="noopener nofollow noreferrer">including wood boards, bowls and accessories</a>.</li>
<li>Move store-bought items, like hummus and ranch, from their original packaging into dishes or bowls for a beautiful presentation.</li>
<li>Seasonal fruits add color, and smaller items, like Goldfish should be placed last as a filler.</li>
<li>Be careful of allergies, including nuts, if making this board for other children.</li>

<p>Welcome to #BrunchWeek 2020 hosted by <a href="https://www.loveandconfections.com" target="_blank" rel="noopener noreferrer">Love and Confections</a> and <a href="http://www.akitchenhoorsadventures.com/" target="_blank" rel="noopener noreferrer">A Kitchen Hoor&#8217;s Adventures</a>! This is our 8th year of #BrunchWeek and 22 bloggers are excited to share all our favorite Brunch recipes. We hope you enjoy all our Brunch recipes throughout the week!</p>
<p>For day 3 of BrunchWeek, I created an appetizer favorite &#8211; Peach, Prosciutto and Mozzarella Skewers. This appetizer is a crowd pleaser, and extremely easy to put together. These skewers are great on their own, drizzled with balsamic glaze and cracked pepper, but would also be great as part of an <a href="https://www.loveandconfections.com/how-to-create-antipasto-platter/" target="_blank" rel="noopener noreferrer">antipasto platter</a>.</p>
<h3>What is Prosciutto:</h3>
<p>Prosciutto literally translates to &#8220;ham&#8221; in Italian and is aged in a dry-curing process. Curing prosciutto originated in Italy thousands of years ago. One of the most notable and with strict quality control is Prosciutto di Parma. The city of Parma is in the Emilia-Romagna region of Italy, which is also famous for Parmigiano Reggiano (Parmesan cheese) and home to Barilla Pasta. Prosciutto di Parma is a 100% natural cured ham made without preservatives, additives, gluten, hormones or any coloring agent.</p>
<p>Prosciutto di Parma is produced with pigs that are specially bred in 10 central-northern regions of Italy, Mediterranean sea salt, air and time. The prosciutto cures anywhere from 400 days to 36 months. Other types of prosciutto are Serrano or Iberico Jamón from Spain, other Italian prosciutti, and American prosciutto.</p>

<h3>Fruit and Prosciutto:</h3>
<p>Melon, specifically cantaloupe, and prosciutto are a traditional match made in Heaven. The sweetness of the melon balances out the saltiness of the cured ham perfectly. Instead of melon, I opted for my seasonal favorite, peaches. That vibrant yellow color is so beautiful, and juicy, ripe peaches are perfect when in season. Figs plums, pears and apricots are other delicious choices to pair with prosciutto.</p>
<p>Peach, fresh basil, prosciutto di parma, and mozzarella are simple ingredients that pair perfectly together. The herbaceous basil, salty prosciutto, sweet peach, creamy mozzarella, and umami from the balsamic glaze come together for a tasty appetizer that is perfect for a crowd. You can also add cherry tomatoes to the skewers for additional flavor and color.</p>

<h3>Types of Mozzarella:</h3>
<p>I love fresh mozzarella, in all its forms. If you&#8217;re not familiar fresh mozzarella, it is a creamy, semi-soft cheese, that is made in small batches. Fresh Mozzarella has a higher water content, and is lower in fat and sodium than other cheeses. Therefore, it is kept in a brine, whey, water, or vacuum-sealed in plastic. It comes in different sizes and shapes, and from either cow or water buffalo milk. Fresh mozzarella is best when consumed fresh and cold. Because of the high water content, it does not melt as easily, and can add a soupy milky texture when cooking.</p>
<ol>
<li>Mozzarella di Bufala &#8211; the traditional mozzarella of Italy, is produced around the Southern region of Campania. It is produced from an Italian breed of water buffalo (not American buffalo or bison). It has a unique tangy taste, and has a much higher fat content than cow&#8217;s milk. Buffalo mozzarella is has specific designations and can only be produced with a traditional recipe in certain regions of Italy. Mozzarella di Bufala is delicious when drizzled with extra virgin olive oil and sprinkled with sea salt.</li>
<li>Fior di Latte Mozzarella &#8211; translates from Italian to &#8220;flower of milk&#8221;. This designation is necessary in Italy, where buffalo mozzarella is more prominent. Fresh mozzarella in the U.S. is mostly made from cow&#8217;s milk, whereas buffalo mozzarella is mostly imported. It is typically the largest of the mozzarella balls and is often sliced thick for a classic caprese.</li>
<li>Ovolini &#8211; the name comes from the Italian word for egg. This mozzarella is a size smaller than the traditional mozzarella balls, about the size of extra-large eggs. They are made from either buffalo milk, cow&#8217;s milk, or a combination.</li>
<li>Bocconcini &#8211; the name comes from the Italian word for mouth; these mozzarella balls are bite-sized and most often made from only cow&#8217;s milk. Marinated bocconcini is a great appetizer or <a href="https://www.loveandconfections.com/how-to-create-antipasto-platter/" target="_blank" rel="noopener noreferrer">antipasti</a>.</li>
<li>Ciliegine &#8211; the name comes from the Italian word for cherry. These mozzarella balls are about the size of a cherry and perfect for skewered appetizers.</li>
<li>Perlini &#8211; the smallest of the balls, these pearl-like mozzarella are a perfect addition to pastas and pasta salads.</li>
<li>Burrata &#8211; similar to a regular mozzarella ball, Burrata is made with either cow or buffalo milk. The outside texture is a firm, fresh mozzarella, but the inside is  filled with soft cheese curds soaked in cream. It is a decadent treat and the creamy filling oozes out when you cut into the burrata.</li>
<li>Stracciatella &#8211; (not to be confused with stracciatella the gelato with chocolate flakes) the proper name of the soft cheese curds inside burrata. It is a mixture of soft, stringy mozzarella curds and cream. Delicious when spread on crusty bread with sea salt</li>
</ol>

<li>Here are a few of my favorite entertaining products, <a href="https://www.amazon.com/shop/loveandconfections?listId=18PBN76S9UPV1" target="_blank" rel="noopener noreferrer nofollow">including wood boards, bowls and accessories.</a>.</li>
<li>The balsamic glaze adds a great depth of flavor, but feel free to use extra virgin olive oil instead.</li>
<li>Prosciutto is a very salty meat, but you can garnish with a few flakes of salt if you prefer.</li>

<p>I have always liked deviled eggs, but I didn&#8217;t LOVE them until I tasted Grandma Lou&#8217;s deviled eggs. Grandma Lou, a family friend, is one of the most sweet and caring people I have met, and she makes some amazing deviled eggs. <li>Store-bought hard boiled eggs are an easy and fast solution if you are short on time.</li>
<li>Taste as you go. Spices and ingredients can easily be added, but not taken away.</li>
<li>Make sure your knife is sharp, so you have a clean, easy cut.</li>
<li>Place ingredients in a piping bag and refrigerate until ready to use.</li>
<li>A large star tip gives the filling a nice appearance.</li>
<li>Don&#8217;t forget garnishes: paprika, chives, parsley, bacon, etc.</li>
<li>Always keep eggs refrigerated until eaten. Food safety is key!</li>

While I love my bagel chips as-is, I love dipping them in cream cheese even more! Bagels and cream cheese are a match made in heaven. I eat these for breakfast, snack and dessert. The key to making a good bagel chip is to get nice, fat un-sliced bagels.</div>

Florida weather has been pretty rainy lately. We can almost guarantee a storm every day, but until that storm hits we have had some pretty hot and sunny days. I live in one of the higher parts of Central Florida, so a lot of times it will be raining around us but we are in full sun. <p>#<a href="https://www.loveandconfections.com/2018/04/BrunchWeek2018.html" target="_blank">Brunchweek </a>is coming to a close and I am sharing my recipe for a delicious and easy overnight oatmeal. My morning routine can sometimes be hectic, and more often than not, I rush out the door without breakfast.</p>
<p>Whether it&#8217;s struggling to get the 4 year old dressed, finishing the lunchbox, or going through every option on the planet for her breakfast and she wants none of it. We&#8217;ve even had the &#8216;no, you can&#8217;t have pickles or chips for breakfast&#8217; talk.</p>

When I get back from the school drop off, smoothies are always a great option, but sometimes I want something a bit more filling. Overnight oatmeal definitely helps when I&#8217;m craving a something sweet.</p>
<p>I added dark brown sugar for sweetness and that rich molasses taste. You can also warm the oatmeal and top with vanilla yogurt and maple syrup for a breakfast with even more protein.</p>

Whatever you do, don&#8217;t buy matchstick carrots for this recipe. The carrots need to be finely shredded to mix in correctly, so grating your own is best. I actually used a micro-plane to get the fine texture.</p>

Carrot Cake Overnight Chia Oatmeal</h1>

Ingredients</h2>
<ul>
<li class="ingredient">1 cup old fashioned rolled oats</li>
<li class="ingredient">1 tablespoons Dixie Crystals Dark Brown Sugar</li>
<li class="ingredient">1/4 teaspoon cinnamon</li>
<li class="ingredient">1 1/2 tablespoons chia seeds</li>
<li class="ingredient">1/3 cup finely shredded Cal-Organic Carrots</li>
<li class="ingredient">1 cup + 2 tablespoons milk</li>
<li class="ingredient">1 teaspoon vanilla extract</li>
<li class="ingredient">pinch of salt</li>
<li class="ingredient">1/4 cup chopped, toasted pecans, optional</li>
<li class="ingredient">Vanilla yogurt and maple syrup, optional</li>
</ul>

Instructions</h2>
<ol>
<li class="instructions">Combine oats, sugar, cinnamon, chia, carrots, milk, vanilla and salt in a bowl or mason jar. Refrigerate overnight.</li>
<li class="instructions">Before serving, add in chopped pecans. Can be served either cold or heated. Add yogurt and a drizzle of maple syrup if desired.</li>
