Frozen yogurt has been a long-time favorite of mine, and it is even better in pop form. We are a huge fan of popsicles here and #ToddlerLnC loved this version. These also made me a happy momma, because it is packed with goodness – Vanilla Greek yogurt, Justin’s Chocolate Hazelnut Butter and bananas.

Chocolate hazelnut butter is one of my favorite flavors – I literally eat it with a spoon right out of the jar, in moderation of course. It is one of those flavors that is good on toast, waffles, cookies, ice cream, etc. When I make smoothies or pops, I always try to use yogurt and a fruit. Bananas are such a great addition to these pops and make them extra creamy.

Chocolate Hazelnut Banana Frozen Yogurt Pops

Stonyfield Yogurt, Justin’s Chocolate Hazelnut Butter, and bananas blend together and freeze into delicious frozen yogurt pops that are perfect for a refreshing breakfast, after-school snack, or dessert.

Ingredients

  • 1 1/2 cup Stonyfield Yogurt
  • 1/2 cup Justin’s Chocolate Hazelnut Butter
  • 2 bananas

Instructions

  • Blend all ingredients and divide between ice pop molds. place lid on top and insert popsicle sticks. Freeze overnight. Enjoy!

I grew up in Miami, where I was immersed in the Cuban culture. Cuban Coffee flowed strong, pastelitos, flan and tres leches were always a treat, and Vaca Frita was my favorite Cuban dish. I loved going to restaurants like Versailles or Sergio’s to fulfill my Vaca Frita cravings, until I learned to make it at home.

It is easy to get restaurant-quality Vaca Frita at home, using spices, marinade and flank steak. Flank steak is one of my favorite cuts of beef. A single serving of beef provides 50% of your recommended daily value of protein, and also has high amounts of zinc, iron, vitamins B6 and B12, as well as other key vitamins and minerals.

Flank steak comes from the abdominal muscles of the cow and is a long, flat and lean cut. Did you know that a single 3 oz. serving of lean beef has an average of 150 calories and less than 10 grams of fat. It has a great beefy flavor and is best when cut against the grain, for maximum tenderness. I love using flank steak for fajitas, satay, stir fry, and seared on the grill.

Vaca Frita is such a flavorful dish. It is cooked, flattened, marinated with garlic, oregano, lime juice, and other spices. Then, it is seared in a hot pan to create the signature crispy texture on the outside. I always serve my Vaca Frita with either sauteed or caramelized onions. The onions balance out the dish because they are so sweet and juicy.

Black beans and rice are also a staple in Cuban food, and I decided to create a bowl for my meal, rather than a larger platter. I love individual bowls because everyone can customize it how they like. Mr. L&C is not fond of black beans, so he left that out of his. #ToddlerLnC and I love black beans, so we had plenty for our bowls.

Lime is a key part to this dish. I love the acidity and flavor it gives to the beef. The flank steak is not only marinated in lime juice, but I also serve with lime wedges. Vaca Frita Rice Bowl

Vaca Frita Rice Bowl

Shredded and crispy flank steak is served with sauteed onions, black beans and rice to form one of my favorite meals – Vaca Frita Rice Bowl. Garnish with cilantro and a lime wedge for the perfect Cuban-inspired dish.

Ingredients

  • 2-3 lb flank steak
  • 1 1/2 teaspoons salt
  • 6 garlic cloves, minced
  • 3 medium onions, sliced thin
  • 2 teaspoons dried oregano
  • 2 bay leaves
  • 1/4 cup freshly squeezed lime juice
  • 1-3 tablespoons vegetable oil
  • Prepared white rice
  • Pprepared black beans
  • Lime and Cilantro for garnish

Instructions

  1. Place flank steak into a large stock pot. Cover with water and add 1 onion, chopped and 1 teaspoon salt and 2 cloves of minced garlic. Bring to a boil, then reduce to medium-low heat and cook for 1-1.5 hours, until tender, making sure the meat stays covered with water the whole time.
  2. Remove the steak, discard onions and water, place on platter or cutting board, and cover with foil while it cools. Once cooled, cut the steak into 6 even pieces. With a meat mallet or wooden rolling pin, pound the meat into thin shredded steaks.
  3. Place the steaks in a large baking dish. Cover with remaining minced garlic, oregano, bay leaves, lime juice and salt. Let the meat marinate for 2-4 hours in the refrigerator.
  4. Remove steaks from marinade and wipe clean with paper towels, so no garlic pieces get burnt on while cooking. Heat a large skillet with 1 tablespoon vegetable oil until hot. sear steak in batches, about 2-3 minutes per side, until golden brown and crispy. Remove and continue with remaining steaks, using extra vegetable oil if necessary.
  5. In same large skillet, add 1 tablespoon vegetable oil and saute remaining 2 onions until translucent. Place steaks back into pan, garnish with chopped cilantro.
  6. To build your bowl, layer rice, black beans, and vaca frita. Garnish with more cilantro and lime slices. Enjoy!

German Chocolate Cookie Bars

German Chocolate Cake is transformed into an easy and rich cookie bar. Use cake mix and pudding for a shortcut that is sure to wow!

I first learned how to make German Chocolate Cake in culinary school. We baked and layered a delicious chocolate cake, made the coconut pecan frosting, frosted, then added some chocolate decorations. I wasn’t a big fan of coconut back then, so I had a bite and moved on.

Fast forward a few years and I decided to start baking with coconut more. Both my dad and Mr. L&C love coconut everything – especially when it’s paired with chocolate. Instead of the normal layer cake, I created some delicious, and easy German Chocolate Cookie Bars.

These bars use a cake mix as the base, which speeds things up, and some chocolate pudding to make it super moist. I also added chopped German Chocolate pieces for some extra chocolate gooeyness. The traditional coconut pecan frosting is jazzed up with an extra drizzle of chocolate on top.

I absolutely love deviled eggs. It is one of those classic appetizers or party foods that I look forward to. When I was younger, we maybe had deviled eggs around Easter, but my family didn’t make them too much. Some of my mom’s catering friends used to make them for parties we had, and I began to like them more and more, but didn’t have them often.

A few years later, I met the sweetest woman, a grandmother of some family friends. She brought deviled eggs to a party and I fell in love with them all over again. I have taken to calling her ‘Grandma’, like many of our friends have too. Even though we are not her grandchildren, she treats us like we are. Grandma Lou is one of the kindest people I know, has the best smile, biggest heart, and gives the best hugs. She reminds me so much of my grandmother, and I love being able to visit her if I happen to be travelling to North Carolina.

When it came time for my baby shower in Raleigh, I had one request for the menu – Grandma Lou’s Deviled Eggs. While it wasn’t one of the things I craved the most, I couldn’t get enough of them at the party, and probably ate half the tray. She was kind enough to make extra for me to keep all to myself.

Since my love of deviled eggs has grown, I have become the person to make them for our parties and holidays, if I happen to not be celebrating with Grandma Lou. I usually create the traditional recipe with mayonnaise, mustard, relish and paprika, but I decided to add a twist with Stonyfield Greek Yogurt and prepared hummus.

This month, the Stonyfield Yogurt Clean Plate Club and I have teamed up with Le Creuset and KitchenIQ to create our own delicious spin on deviled eggs. I received a gorgeous deviled egg platter from Le Creuset and a set of measuring spoons and cutting boards from KitchenIQ. I use the color-coded cutting boards on an almost daily basis and can’t begin to tell you how much in love I am with those measuring spoons!

Hummus Deviled Eggs

Hummus Deviled Eggs are an easy spin on the southern classic. Hummus and Stonyfield Yogurt take the place of the traditional ingredients for a creamy and delicious appetizer or snack!

Ingredients

  • 6 hard boiled eggs
  • 1/4 cup Stonyfield Whole Milk Plain Greek Yogurt
  • 1/4 cup prepared hummus
  • 1 tablespoon sweet relish
  • 1/8 teaspoon celery salt
  • 1/8 teaspoon ground black pepper

Instructions

  1. Slice eggs in half and place white onto serving tray. Place yolks, yogurt, hummus, relish, celery salt and pepper into a mixing bowl and mix until well combined.
  2. Place into piping bag fitted with star tip and pipe into egg whites. Refrigerate until serving. Best served the day you make them

Caramel Sauce

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup butter
  • 1/2 cup heavy cream
  • 1 teaspoon salt, optional

Instructions

  1. Place sugar in a medium saucepan on medium heat, stirring constantly with a heat-resistant spatula. The sugar will eventually clump and start to melt.
  2. Once the sugar melts, it will start to brown and darken to an amber color. Do not let it darken or burn. Stay with the pot and do not leave it on the stove. Switch to using a whisk
  3. Quickly, but carefully, stir in the butter. The mixture will bubble rapidly. Once the butter is melted, slowly drizzle in the heavy cream. The mixture will bubble, rise, and possibly splatter. Boil for 1 minute, then remove from heat.
  4. Pour into glass jars and let stand on the counter until it is room temperature. Store in the refrigerator for up to 2 weeks. Warm before using.

Yield: 2 half-pint jars
Cook time: 10 mins.

Good food, family, friends and fireworks always made it a special day. We have apple pie on the Fourth, and of course vanilla ice cream to top it with, so I thought that would be the perfect combination for an easy and delicious milkshake.

Our Fourth of July celebration always consisted of grilling, swimming in the pool, and lot (and lots and lots) of fireworks. We had so many fireworks that a large table was set up to display and organize them all. The fathers in our cul-de-sac went all-out every year. We set up lawn chairs in our driveway to watch the show. My mom even grew an aloe plant just for our Fourth of July celebrations, in case anyone got burned from a sparkler or firework.

One year, we had a rogue firework that, when lit, flew sideways and onto the firework staging table. I have never seen the Dads move so fast in my entire life. They all lunged for the table, knocking off the bad firework, so we didn’t accidentally light everything on fire. Apple Pie Milkshakes

  • 2 slices apple pie
  • 1/2 cup milk
  • 5 scoops vanilla ice bean ice cream
  • 1/2 teaspoon ground cinnamon
  • toppings: whipped cream and sprinkles
  • optional: graham cracker crumb rim

Instructions

  • Place apple pie, milk and ice cream in a high-powered blender. Blend and serve in chilled glasses. Top with whipped cream and sprinkles.

Yield: 2 servings
Prep Time: 5 mins.

The weather this Summer is quite warm, with days in the mid-90s recently. We have been doing a good amount of grilling and hanging out by the pool. I love using seasonal ingredients and Summer in Florida is one of my favorite seasons for fresh Florida food.

I love taking my toddler to farms and farmer’s markets so she can see where the food comes from and have a greater interest in the food she eats. She loves picking blueberries. We pick buckets every year, and freeze a bunch, so we can enjoy them until the next blueberry season. She also enjoys helping me pick and shuck the sweet corn we buy from the farm or farmer’s market.

I decided to combine two of my favorite Summer ingredients, blueberries and sweet corn, into one amazing dish – Skillet Sweet Corn Blueberry Cornbread. While we do a lot of grilling outside, I love having a side dish, like cornbread, available for mealtime. This bread is extremely moist, with just the right amount of sweetness.

I even tried a new way of cooking the corn. I read online to fill a large pot halfway with water, bring it to a boil, then add a cup of milk, 1/2 cup of butter, and corn. Then cook it for 8 minutes and you have a juicy and delicious corn on the cob. For this cornbread recipe, I simply cooked the corn in milk and butter, then cut the kernels off of two medium-large cobs.

I also baked the cornbread in a cast iron skillet. I am still new to the cast iron cooking world, but have fallen in love with it. The skillet created a delicious crust on the cornbread that you wouldn’t normally get when using a regular baking dish or cake pan. I will definitely be using my cast iron skillet for more recipes this Summer.

Skillet Sweet Corn Blueberry Cornbread

Skillet Sweet Corn Blueberry Cornbread

Fresh from Florida Sweet Corn and Blueberries combine in a delicious cast iron skillet cornbread

Ingredients

  • 3 tablespoons Vegetable Oil
  • 1 cup Cornmeal
  • 1 cup + 2 tablespoons All Purpose Flour, divided
  • 2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 1/2 cup Granulated Sugar
  • 2 Large Eggs
  • 1 cup Buttermilk
  • 1/2 cup Unsalted Butter, melted and cooled
  • 1 cup Florida Blueberries, fresh or frozen
  • 1 cup cooked Florida Sweet Corn Kernels

Instructions

  1. Pour vegetable oil into cast iron skillet. Place skillet into cold oven, then heat to 400F, making sure the oil is hot. Once hot, take out of the oven and using a pastry brush, brush the bottom and sides of the cast iron skillet to coat.
  2. In a medium bowl, combine the cornmeal, 1 cup of flour, baking powder, salt, and granulated sugar.
  3. In a smaller bowl, whisk the eggs, buttermilk and butter together. Pour into dry ingredients and mix to combine. In another bowl, add the blueberries, corn, and 2 tablespoons flour. Toss to combine, then gently fold into the batter.
  4. Pour the batter into the hot cast iron skillet and level the top with a spatula. Bake for 25-30 minutes, until the cornbread is golden brown and a toothpick inserted into the center comes out clean. Serve warm.

Cook time: 00 hrs. 30 mins.
Total time: 50 mins.

Cinnamon Tea Cookies
From Padma Lakshmi for TAZO®
Yield approximately 30 cookies

Cinnamon Tea Cookie Ingredients:
– 1 & 1/3 cups flour
– 1/4 teaspoon salt
– 3/4 teaspoon cinnamon powder
– 1/4 teaspoon baking soda
– 1 cup sugar
– 10 tablespoons butter, softened
– 1 egg
– 1 teaspoon vanilla extract

Cinnamon Tea Cookie Directions:
1. Preheat the oven to 375°F.
2. Sift all dry ingredients except the sugar together in a bowl. In another bowl, combine sugar, butter, eggs and vanilla extract until smooth. Combine contents of both bowls together to form a cohesive cookie dough.
3. Now, using your hands, make small balls about 1 inch in diameter with the dough. Place these balls 2 inches apart on a nonstick baking sheet or line a shallow sheet pan with aluminum foil and fill.
4. Bake these in the oven for 12–15 minutes or until just medium brown. Cool on a rack and store in airtight containers. Should last for up to 2 weeks.

Chocolate Eclairs are one of my favorite pastries, with vanilla bean pastry cream and chocolate glaze. I created these delicious beauties for National Dairy Month with Florida Dairy Farmers and Sunday Supper.

One of the things I often ask people I meet is “what is your favorite dessert or pastry?” As a pastry chef, I love knowing what sweets other people like. When asked about mine, I don’t really have a favorite, but eclairs are definitely at the top of the list. Pastry cream is one of my favorite things to make. It’s amazing how milk, sugar and eggs, and a few more ingredients, can be transformed into something so rich and delicious.

The state’s more than 130 dairy farms are primarily owned and operated by second and third-generation farmers. Most of the dairy cows living in Florida are Holsteins – the black and white cows. Lafayette and Okeechobee are Florida’s leading dairy counties and most Florida dairy herds range in size from 150 cows to 5,000 cows. With all those cows, Florida dairy farmers recycle about 170,000 tons of byproducts such as citrus pulp, brewers’ grain and whole cottonseed that are consumed by the cows instead of ending up in landfills. There are about 123,000 dairy cows in Florida that collectively produce about 2.34 billion pounds of milk a year. The total represents 277 million gallons of Florida-produced milk in the grocery store.

I absolutely love dairy, and we enjoy it every day. #ToddlerLnC starts her day with a sippy of milk, and I use milk in my morning cup of coffee. We use milk in smoothies and other recipes for lunch or dinner. Three cups of milk a day is recommended to get your daily allowance for dairy. Milk contains 9 essential nutrients and vitamins: protein, vitamins A, D, and B12, calcium, potassium, phosphorus, riboflavin, niacin, zinc, and magnesium.

Chocolate Eclairs
Adapted from a culinary school recipe

Pastry Cream Ingredients:
 – 500 grams Whole Milk
 – 100 grams Granulated Sugar
 – 100 grams Egg Yolks
 – 100 grams Granulated Sugar
 – 40 grams Cornstarch
 – 75 grams Unsalted Butter
 – Seeds from 1 Vanilla Bean or 1 teaspoon Vanilla Bean Paste

Pastry Cream Directions:
 1. In a stainless steel pot (not aluminum) heat Milk and first measure of Sugar until sugar is dissolved and the milk is hot but not boiling.
 2. In a medium bowl, whisk together the Egg Yolks, Sugar and Cornstarch. Temper* milk mixture into yolk mixture.
 3. Pour tempered egg mixture back into the pot and return to a boil, cooking about 2-3 minutes or until nappe**
 4. Strain the pastry cream through a fine mesh sieve into the bowl of your stand mixer and beat on the lowest speed. Add in the Butter and Vanilla Bean Seeds or Paste after it has cooled for a few minutes.
 5. Pour into a clean medium-sized bowl, cover with plastic wrap directly on the surface and allow it to cool to room temperature before storing in the refrigerator.
– It is best made the day before the Pate a Choux, so it has time to fully chill.

Pate a Choux Ingredients:
 – 240 grams Whole Milk
 – 113 grams Unsalted Butter (1 stick)
 – 2 grams Sugar
 – 2 grams Salt
 – 110 grams All Purpose Flour
 – 225 grams Eggs
 – 1 Egg for egg wash
 – Powdered Sugar (optional)

Pate a Choux Directions:
 1. Heat oven to 400F. Prepare sheet pans with parchment or silicone mats.
 2. Bring the Milk and Butter to a boil. Add in Flour, Salt and Sugar and cook on medium-high, stirring constantly with a wooden spoon, until a paste is formed. The mixture should form a ball or leave a film on the bottom of the pot.
 3. Remove from the heat and place in the bowl of your stand mixer with the paddle attachment. Beat on low for a minute then add in the eggs, one at a time, making sure the previous one is incorporated before adding the next one.
 4. Once all the eggs have been added and the mixture is a bit cooler, put in a piping bag fitted with a large circle tip. Pipe strips of choux on the sheet pans, trying to not create a point when lifting off. Using a pastry brush, or your fingers, gently brush the egg wash over the eclairs, trying to make sure there is no point sticking up.
 5. Bake at 400F for 5 minutes, then turn the oven down to 375F for the remaining time. It should take about 30 more minutes, or until the puffs are dry and golden brown. Do not crowd the oven. You might need to bake these in two batches.
 6. Let them cool completely before filling. To fill, gently pipe the pastry cream into the eclairs. Refrigerate or freeze until glaze is done.

Chocolate Glaze Ingredients:
– 5 ounces chocolate chips
– 1/2 cup heavy cream
– 1/2 tablespoon corn syrup

Chocolate Glaze Directions:
1. Place chocolate chips in a medium bowl. Heat Heavy cream and corn syrup in a small saucepan until it just starts to boil.
2. Pour the hot cream over the chips and let it sit for a minute. Whisk the chocolate and cream to make a ganache.
3. Gently dunk each eclair into the glaze and shake off any excess. Place onto baking sheet or serving tray. Chill until serving. Can be made ahead and chilled.

*Tempering: eggs are tempered when a hot liquid, usually milk, is slowly streamed into them, while whisking constantly, to bring the eggs up to a warm temperature without cooking them.
**Nappe: French term referring to a liquid “coating the back of a spoon”. With pastry cream, if you run your finger through the (hot) pastry cream on the back of a wooden spoon, the lines will stay separate.
