I love nostalgic treats, especially if they have to do with ice cream. Malts, milkshakes and floats are some of my favorite frozen indulgences. The local burger joint was always a favorite restaurant spot to visit growing up. My family would meet up with my best friend’s family on the weekends, grab burgers, fries & root beer floats, and share a meal. My favorite treat was the root beer float. Every few weeks the restaurant hosted a classic car show and we would wander through the parking lot looking at the pristine cars, sipping on floats.

I grew up with a love of root beer – from my dad – and birch beer – from my grandmother. Because of this love, I knew I wanted to craft the perfect ice cream. I couldn’t just freeze root beer because it would get too many ice crystals. Boiling it down also reduced the flavor. The best option is a root beer concentrate or candy flavoring. The tiny bottle packed a huge root beer punch and was the best choice for the ice cream.

A secret ingredient gives this ice cream a delicious and creamy taste, like an actual root beer float. We don’t have much Fall weather yet, so we are still enjoying this ice cream quite a bit.

This cookie is almost a mix between a shortbread and a sugar cookie. The buttery texture melts in your mouth and the lemon hits you with such brightness. Citrus in cookies is one of my favorite flavors. Gorgeous citrus like lemons, grapefruit, oranges and limes, is readily available in Florida. I enjoy those flavors year-round in all of my baking and cooking. My Lemon Ricotta Bundt Cake and Sunrise Smoothie are definite winners around here.

Until pastry school, I had never used lavender in baking. I always associated it with perfume and soap; often an overpowering smell. Culinary lavender definitely changed my way of thinking. Using it in baked goods and chocolate, in a reasonable amount, adds so much to the flavor.

A light floral flavor pairs nicely with lemon. A food processor breaks apart the lavender buds and mixes it with the sugar. You could definitely stop there and place the lavender sugar in a mason jar for future use. I would also add a vanilla bean pod. Imagine the aroma the next time you opened that jar of lavender vanilla sugar!

When using lavender in baking, you don’t want too much that it resembles perfume, but just enough that you notice it in the dessert. In addition to the lemon glaze on top of the cookie, feel free to add more culinary lavender as garnish – or even some of that lavender sugar!

I wanted this cake to be pink inside and out. It starts with one of my favorite – and easy – vanilla almond layer cakes that I tinted pink. I made a full batch of my vanilla almond frosting, but didn’t need to use it all, so there will be extra. Hello, mid-week decorated cupcakes! My Little loved this cake because her current favorite color is pink. If she had her way, she’d eat it for breakfast, lunch, dinner, snacks, and dessert too.

The toppings definitely make the cake. Chocolate drip cakes are really fun to make because they can be customized completely. I love using edible decorations, like snack cakes, homemade meringues and macarons. Make sure you give yourself enough time to have everything made beforehand. You can’t have Valentine’s Day without some sort of chocolate. I chose a chocolate cupcake base to compliment my frosting. Cinnamon extract, which is optional, perfectly pairs with the moist, chocolate cupcake. If you’re not a fan of cinnamon, you can add extra vanilla or even almond extract.

The perfectly pink frosting gets its color from cinnamon candies. I warmed some milk and let the candies sit in the milk before straining and adding it to the buttercream. I have seen some people try and pulverize these candies in the food processor, but they are pretty tough. Soaking in milk really brings out the cinnamon flavor and you don’t have to worry about grainy candy bits ruining the frosting. I added 1 small drop of gel food coloring just to brighten up the pink.

Decorations on cupcakes are a must! You should see my ever-growing sprinkle collection. Red, white and pink confetti hearts top the cupcakes and add some whimsy. Cupcake toppers are always adorable. Local party stores always have cute options, or a DIY cupcake topper is great in a pinch.

I love bread pudding because there are so many different flavor combinations. I like my bread pudding with a little crunch on top crust and a soft creamy inside. The key to a great bread pudding is to have a soft center without the bread pieces turning into one big pile of mush. You can’t go wrong with a classic vanilla cupcake, but I upped it a notch with my favorite flavoring – vanilla bean paste. I love seeing those little vanilla seeds in baked good and ice creams. The white chocolate frosting is a perfect accompaniment to the cupcake. I didn’t want a colored or chocolate frosting for our New Year’s party and an all white cupcake definitely makes a statement.

It also shows off the beautiful gold sprinkles. I seriously have a sprinkle (and paper straw) addiction. New Year’s Eve is extra special so some extra sparkle or bling is necessary for the occasion. Please be sure to read package directions, because even cake specific sparklers say they are for outdoor use only.

For table decorations, I am keeping with a simple black and gold theme. Gold, stemless champagne flutes with gold straws are for the bubbly. Cake stands on a black tablecloth show off the yummy cupcakes and create an interesting display with different heights. My friends at Revel created some beautiful laser-cut gold-leaf wooden “cheers” signs for my tablescape. These would also be perfect if you were having a formal dinner for a place setting.

Crème Brûlée is most probably in my top 3 favorite desserts, alongside eclairs and ice cream. The smooth, creamy custard topped with caramelized sugar just beckons to be cracked with a spoon into a hundred little pieces. I love the texture combination of crème brûlée – silky smooth and crunchy.

Making crème brûlée isn’t too difficult, but I wanted to make it bite-sized and in cookie form. What better way to have the best of both worlds than with a cookie cup. The cookie cup holds the perfect amount of pastry cream – no need to bake the custard here since it’s already cooked in a pot. It also makes the top nice and flat to sprinkle and caramelize sugar on, just like the traditional dessert.

To caramelize the sugar, you need a torch. Because of the cookie base and pastry cream, it can’t go in the oven under the broiler, like some recipes call for. A small crème brûlée torch is fine if you don’t use it often. I opt for a hardware store torch, because I use it for crème brûlée and toasted meringue quite a bit. As always, when playing with fire, please keep a fire extinguisher handy – we own one for the sole purpose of torching sugar and meringue, just in case.
